2 k appelsap 1 k water 1 kaneelstokkie 3 heel kardemompeule, effens fyn gedruk 1 k gedroogde appelringe 1 k gedroogde pere 1 k pruimedante 1 k perskes paar gedroogde appelkose
Stroop 3 E versoeter of suiker 1½ t mielieblom
Jogurt 1 k laevet bulgaarse jogurt ½ t fyn kaneel 50 g pistasieneute, grof gekap
Plaas ‘n metaalrakkie in ‘n geskikte kastrol. Giet appelsap en water daarin saammet die speserye. Plaas droëvrugte bo-op. Plaas kastrol se deksel terug en verhit tot kookpunt. Draai hitte laer nadat kookpunt bereik is en stoom vir nog 12 min. of tot sag*. Verwyder van hitte. Haal droëvrugte uit, asook die metaalrakkie. Verwyder kardemompeule en kaneelstokkie.
Skep klein bietjie van vloeistof uit in ‘n geskikte houertjie en meng mielieblom en versoeter by. Meng by vloeistof in kastrol. Verhit vloeistof weer tot kookpunt. Verwyder van hitte en skep bo-oor gestoofde vrugte. Meng bestanddele vir jogurt saam en sit saam met gestoofde vrugte voor.
*Jy kan oornag die vrugte in die appelsap, water en speserye week.
Stewed fruit for breakfast

(Serves 4)
2 c apple juice 1 c water 1 cinnamon stick 3 whole cardamom pods, lightly crushed 1 c dried apple rings 1 c dried pears 1 c prunes 1 c peaches a few dried apricots
Syrup 3 T sweetener or sugar 1½ t corn flour
Yoghurt 1 c low far Bulgarian yoghurt ½ t cinnamon 50 g pistachio nuts, roughly chopped
Place all the ingredients in a large bowl. Allow to stand overnight. Pour the liquid off. Place a metal rack in a large enough pot. Pour the liquid into the pot. Place the dried fruit on top. Place the lid on top of the pot and heat until boiling.
Turn the heat down and steam for 12 minutes until soft. Remove from the heat. Remove the dried fruit and the metal rack. Remove the cardamom pods and cinnamon stick. Spoon a little of the liquid into a small bowl and mix with the corn flour and add the sweetener. Mix with the liquid in the pot.
Heat until boiling and thickened. Remove from the heat and spoon over the stewed fruit. Mix the ingredients for the yoghurt together and serve with the stewed fruit. |
